Cucumbers and more cucumbers

The cukes went a little crazy in the garden this year. Mine were bitter last year and I was too chicken to try them this year so I just went ahead and pickled them all. Yep still have more and they're still growing.

Thank goodness the zucchini have stopped growing. My limit for fritters and zucchini bread was being reached and I don't think my bible study appreciated the zucchini brownies I made them endure.

  1. Zucchini freezes well for cakes/breads and then rehydrates well for soups if you want to dry them.
    Tim LOVES my chocolate zucchini cake and loathes the green buggers:).

  4. E-Thanks for the freezing tip. I always forget about that option for some reason. I'll have to try the chocolate recipe:)
    J-Did a couple of the big applesauce sized jars.
    K-I just pickled the cucumbers not zucchini, so not that creative:)
